now i love making + eating my salad

I love salad.
Until recently 
I did not like making
or eating it.
My friend Pam
taught me her way to make salad.
Now I'm hooked and
actually enjoy the process and the result
therefore eating more greens.
I guess I was sick of my variation of salad.
I would make same old vinaigrette....
blah blah blah.

Here's what I do now thanks to Pam.

 Grill something....last night it was zucchini
 + grilled chicken breast
toast some pine nuts in a couple tablespoons of EVO.
(I use just this EVO to dress the salad + it's a bit warm which is good...my new trick)
thinly slice raw fennel
 slice red onion
 
throw it all in bowl with arugula
+
grated parmesan cheese
squeeze half a lemon on salad.
Add maldon salt and freshly ground pepper.
Toss + toss.
That's it.
YUM.
Pam's tricks?
Toasted nuts, any kind.
Grated parm.
Just lemon to dress.
Why didn't I think of that?
She promised to teach me some other variations....yay!

happiness is...

when your sweet friend & neighbor, Tracy, brings you treats from Arthur Avenue in the Bronx. She dropped off a bag of fresh mozzarella, semolina bread and biscotti yesterday eve. I stood at the kitchen counter and dipped bread in olive oil and topped with the fresh cheese....YUM! I'll savor the biscotti with my tea in bed until the bag is empty. I thank you, Tracy!

god bless jayne & leslie

Jayne Sutton is THE BESTEST baker I know. Her cookies and cakes are not only the most delicious sweets I have ever tasted...they are the most beeyouteeful. Her signature treats are teeny weeny cookie creations...ones that you just pop in your mouth in one little bite. I was so lucky today to see her in action in my own kitchen. She and Leslie, her daughter and my dear friend, were kind enough to come help me make royal icing for our upcoming cookie workshops....this task consisted of 63 pounds of powdered sugar! THEN they insisted on helping me bake 4 dozen of my holiday cocoroons for a cookie swap. I LOVED seeing Jayne in action! Thank you Jayne and Leslie for all your help today!
